What Is Liquid Sunflower Lecithin?
Lecithin is a natural emulsifier found in sunflower seeds. During oil refining, lecithin is separated from crude oil as a by-product of degumming. The resulting liquid is processed and standardized into food-grade liquid lecithin, classified under EU additive code E322. It typically contains ≥60% phospholipids — the active emulsifying compounds that make it so valuable in food production.
